Commercial cooking exhaust systems in New York City must be by a person holding a certificate of fitness (W-64/P-64) who is employed by an FDNY approved Commercial Cooking Exhaust System Servicing Company.
The NYC Fire Department (FDNY) requires that exhaust systems used in commercial cooking establishments such as restaurants, hospitals, hotels, schools, employee cafeterias and other food-service locations be inspected and cleaned at least once every three months.
These Certificates of Fitness are valid only for the specific person to whom they are issued and can be used anywhere within New York City.
